The Market at Dawn

The experience begins at 6:30 AM at Karaikudi's Athangudi market, where Meena Aachi guides you through stalls heaped with star anise, kalpasi (stone flower), marathi mokku (dried flower pods) and over thirty other aromatics that form the backbone of Chettinad cooking. You will learn to identify quality spices by touch and smell, and negotiate with vendors the way local families have for generations.

Into the Chettinad Kitchen

Back at the family's ancestral mansion — a 19th-century courtyard house with carved teak pillars and Athangudi tiles — you don an apron and grind spices on a stone attukal. The hands-on menu includes Chettinad chicken curry, kuzhi paniyaram, kozhambu, appam, and the famously peppery kavuni arisi (black rice pudding). Every dish uses the spice blends you prepared that morning.

The Feast

Lunch is served on banana leaves in the courtyard. Your dishes join the family's own preparations — a ten-course Chettinad sadhya eaten cross-legged on the cool tile floor. The host shares stories of the Nattukottai Chettiars, their maritime trade routes, and how Southeast Asian spices found their way into this landlocked cuisine.

Take It Home

You leave with a printed recipe booklet, a pouch of the freshly ground Chettinad masala you made, and a vocabulary of Tamil cooking terms that will change how you read any South Indian menu.
